I did this while I was going for Welcome To The Club, (and screwing it up). I chose my Alma Mater to be South Alabama, then I chose my team to also be South Alabama. What I then did was go to my roster, edit my players to make them 99's, including awareness, so that they played well in the sim. Once I had all my starters taken care of, I simmed the season. The plan is to go undefeated, so that you are eligible for the National Championship game, (I'm not a NCAA guru, so I don't know how the bowl games work and eligibility go and what not, so I just aimed for undefeated). Honestly, I'm not sure if you have to win the NCS game, since the achievement says "lead", but I would certainly go for it.

If for whatever reason you are paranoid about losing the game, save every three weeks or so. Use two slots in case of autosave. I went undefeated twice as two different coaches. Be careful trying to get this achievement second year. Many of the starters you had are seniors, and you will be playing much better teams, so you can actually lose games.

Anyways, long guide for a simple, short, big gamerscore, achievement. Hope this helps those of you who were/are in need. (:
