For the easiest opponents go to co-op and battle the weak AI.
This skill is available when playing the Berserker class, it does pretty good damage so even one-on-one you can whittle an opponents health down all the way in one spin.
When it's ready use it as much as you can and you should be double-sword-spinning your way to this achievement in no time.
