A Guard Impact happens when a defending player presses forward + the Guard button as an opponent is attacking them. I found it easiest to pull this off by waiting just a split second after the opponent started their attacking animation.
This can be done in Practice mode easily enough. Just Guard Impact three times for the Achievement.
