Note: As mentioned in the Walkthrough, put the game on Easy.

It is worth noting, that for the most part I worked towards this without working towards any other achievement at the same time. By the time I got to this achievement, it was all I had left. I tried a few different things, and this seemed to work the fastest.

First off, here is the set-up that I used:

Fighter: Yu Bei (he charges KI faster than anyone else)
Opponent: Maze
Totem: Sphinx (it looks like a Lion)
Ring: Dojo

In Round 1, I would immediately charge my KI until it was full. Then, I would perform a one-bar KI attack (by raising my knee). After the KI attack, I immediately charged my KI again until it was full and performed a long-range slam (note: make sure he stays at long range if you have to - for me however, Maze never stepped forward). This knocked him out of the ring without ever having to do the "Smash Off". The time remaining in the round was always either 83 or 84 seconds.

Round 2 requires way more set-up as you don't want to accidentally win it via Ring Out.

To avoid doing that, here is what I would do:
I would charge my KI until it was full and perform a one-bar KI attack immediately followed by a power swap (i.e., a long range swap). You don't even have to wait for the animation to stop before you cross your arms for the swap - also, the short range KI attack will put him in the long-range attack distance. After the power swap, I would do the same thing (i.e., 1) charge my KI until full, 2) perform a short range KI attack, 3) immediately perform a power swap). After the 2nd power swap, I would use the Sphinx totem and then "charge" my KI which would drain Maze's health to zero and KO him. At the end of this round, I would have 76-77 seconds left.

Using this method will take you a little more than 1 minute per match including load times and attack animations. A realistic goal would be to get around 10% progress per day/session, which takes anywhere from 35-40 minutes. It is by far the single most time consuming achievement in the game as you have to set up the 2nd round so that you don't accidentally knock your opponent out of the ring (thereby accidentally winning the match via Ring Out).
