The best way I found to do this is go into Manage Team and edit your team (or Create one if you haven't already) and put Too Tall Jones as one of your Silver Players at Defensive End. Go into the game and turn OFF all Penalties. Then just cross the line of scrimmage before the quarterback hikes and the ball and tackle him for a loss.
For more chances, punt the ball as soon as it changes possession and repeat.
This will also work for the Sack achievements.
