Start a career on beginner and select judo as your style. The weight class shouldn't matter, but I went with flyweight and went with the tallest they would let me be.

When you train, put everything into takedowns and joint submission. Once those are maxed, you can continue to work on the other ground and submission stats, but really only those two are needed. Once you get access to a gameplan, use chess master as soon as you can (and when you get two slots, use the one that slows their stamina after a takedown).

For each match, don't bother wasting time trying to beat up their body. It's really not necessary on this difficulty setting. Just immediately shoot for the single leg into sidemount (LT+right stick toward and up). If that's not working for you, use the slam version (although this one is supposedly easier to stuff) by pressing LT+LB+right stick toward and up.

Once you hit the mat, just immediately go for the kimura (RB+right stick quarter circle). At this point, the submission is yours if you have a bit of practice. Generally on beginner, the computer will only go two directions back and forth to defend. Just keep practicing and you should be able to nail the kimura on the first try every time. If for some reason you win in another manner or you lose, immediately pause and select quit. This will put you back into the gym and let you try again.

As a note, only your UFC fights count toward this, so if you sub the guys on TUF, it won't count. You'll need 12 straight in the actual UFC. Please comment if you have any questions!

EDIT: Thanks to Epic Debaser for noting that The Ultimate Fighter finale counts as your first fight in the UFC (although in the game you are not eligible for any performance bonuses for this fight, it is on your official UFC record).
