The Hunter subclasses are Gunslinger and Bladedancer. When the game was first out, you were limited to Gunslinger and could only unlock Bladedancer after you got to level 15, but this is no longer the case -- you are now allowed to select any subclass on any character immediately.

While Titan and Warlock both have a subclass that are geared heavily for fireteam support (Defender and Sunsinger respectively), both Hunter subclasses are designed to be average at both team support and striking it out as a lone wolf. I found that the combinations of abilities play just about identically, and the only significant incongruency are their supers. Gunslinger's super is a solar-damage golden gun with three shots in it that you must use within 15 seconds, and Bladedancer's super is an arc-damage lightsaber that lasts 10 seconds. This obviously comes down to whether you want to melee enemies to death or shoot them from afar. I personally prefer the Bladedancer in almost every situation that doesn't require solar damage.

To earn this achievement, you must unlock every skill in the subclass tree. To access the subclass tree, go to the Start menu, hover your cursor over the largest, top-left icon, and push Y. Unlocked skills have a full green circle around them and locked skills have a space between the two ends that indicates you need more experience (or no green circle around them at all). The skills begin at the top left and unlock in a cascade to the bottom and right, so Gambler's Dagger is the last skill you unlock as a Gunslinger and Hungering Blade is the last skill as a Bladedancer.

Experience from kills is the most obvious way to contribute to your subclass skills, and skillfully dispatching enemies gains the most experience (precision kills, chained kills, kills with your super, etc.) Earning reputation for any faction also contributes to class skills (and weapon/armor unlocks), so completing tons of bounties, doing patrol missions, decrypting engrams, and other mundane activities a Guardian must partake in will help you along. I am also reasonably certain that actions similar to the locked skill make it unlock faster, such as grenade kills to unlock the different types of grenades you have left, or throwing knife kills to unlock Gambler's Dagger, but I can't say that with any certainty.

You will likely not unlock this achievement until well past level 20 (what the game refers to as "light levels".) I did not receive this achievement until I was Light Level 24, which was approximately 40 hours of play spent entirely on the campaign and Vanguard Strike missions that were appropriate for my current level. Others have reported as little as 15 hours to max out a subclass, so your mileage may vary depending on how fiercely you focus on maximum experience output.

NeoVampyreDaft question but does it matter which class you do as long as you fully level one of the sub classes for that character up? It just seems daft they are both called 'sub- class'.

Mobius EvalonAye, Gunslinger and Bladedancer are both a "subclass". Regardless of which one you choose when you start the character, unlocking all the skills for your chosen subclass unlocks the achievement.

You may want to update this, as it only took me 14 hours and 8 mins to max out a Hunter.

So for those that would rather not do the same 20-30 hour grind three times there is another option. You can buy subclass shortcuts in the Xbox live store which will instantly max out your subclass. The only problem with doing this is that the shortcuts are horrendously overpriced at 30$ a piece so I'd only recommend doing it if you either are rich or really hate this game.
Here's a video of what using the shortcut looks like.

The method I used to earn XP in all classes was practically the same, always doing the main missions up to the Nightstalker subclass of DLC The Taken King, after that I did secondary missions every day that you can get in the Tower.
