  Regards the hunting challenges, instead of copying what other have said, just have a look

  The Master of the Wilds achievement in Middle-earth: Shadow of Mordor - Game of the Year Edition worth 51 pointsComplete all Hunting Challenges.

  at the Goty ed guide.
  
  Only one gave me issues was:
  Hunting Challenge 9: Kill a Ghul Matron
  I had waited around at night, gone to Barrows of Udun tower, as some videos had show, killed ghuls & the last 2 would get an icon alarm above heads to get backup.
  Unfortunately they would not often return, or not bring a Ghul Matron (or the 1 time I got one I died to it, as I didn't have any bow energy.
  
  So, we shall do a side mission & use an ability to instaKill it.
  
  1st map = Udun > Udun Crossing Forge Tower (near bottom left of map, next to WestGarrison/Sea of Numen fast travel) > silver mission icon to south - Nameless Things (Sword Legend mission).
  -Kill 3 camps of Ghuls in a cave > Ghul Matron appears > instaKill with Lethal Shadows trike - LT+X (need to unlock & buy with Ability points on 3rd row) just takes too long with headshots or Finishers.

  EDIT: napoearth posted in the comments the requirements for this achievement may have been changed, i don't own a 360 so won't be able to check. If anyone get's the same findings please put it in a comment and i will update this solution
  
  This is not a complete guide for this achievement only a little help for the hardest part.
  
  For people having a hard time find finding a Dire Caragor, go to the second area, there will be a cave on the left side, go there. Most of the time there will be a Dire Caragor there. Make sure you got shadow mount to make it even easier. Drain the Dire Caragor till it's almost dead, dismount and shoot it in it's head with an arrow.
  
  I have heard people say you can drain them all the way and completing the challenge but can't confirm this myself.
  
  EDIT: Thanks to Xystra for pointing out that you won't be able to find any Dire Caragor before you did the Dire Caragor mission for the dwarf.

  This guide was for 360 only, so i guess they changed it. I'm affraid i don't own a 360 anymore so won't be able to check..

  No need to check, two people told you. There are now only 8 Hunting challenges. I seem to have forgotten which two were dropped, but I guarantee it is now 8. Mobius Evalon says it is the Graug and the Horned Graug, and that sounds right to me. I misstated earlier.
