This is not as bad as it seems, the times are relatively forgiving, and definitely doable solo (although you can get better times coop, as you can't always control both characters as well solo).

General tips for optimizing your time solo:
Try to keep both characters moving at the same time when you can so you don't have to move them one at a time.
You often don't have to switch the character you are controlling when you are going through basic obstacles. e.g. if you have to hop over a small barrier, keep them both moving forward, and hit A to jump the small one over, Y to switch sizes, and then A to hop the other over (now that he is small again).
When using a switch, you can often switch to the other character and drag him away from the switch before the animation is finished. This is useful if you need to keep moving after hitting the switch anyway.
When using an elevator, if one of the characters is trailing behind, switch so whoever gets their first is small and go ahead and hit the switch while you are waiting for the other one to get there. While there may be a rare situation where they won't get there in time and will get squashed, 95% of the time this will save you a couple seconds.

I generally played through each level twice.

First time to make sure I knew what I was doing (I would definitely not do either of these runs while trying to get cola bottles, but it wouldn't be a bad idea to do these two runs right after getting the cola so you are familiar with the level).
Second time to get a decent time. For the most part you don't need any fancy shortcuts, just go through the level in a straightforward manner. If you make a minor error (that costs you a few seconds), you don't really need to restart (although you might want to make a note next to that level so you know you have relatively easy room for improvement). If you mess up badly, it's probably best to restart,since none of the levels should take more than a few minutes anyway.

My target times were based on the #1 leaderboard times, but scaled up to meet the achievement target. e.g. if the leaderboard times added up to 10 minutes, and the achievement requirement was 20 minutes, I multiplied the leaderboard times by 2 to arrive at my goal. For this board, the goals and my actual times (in parentheses) were as follows:

1-01: 0:52.39 (1:00.29)

This world is probably actually one of the harder as far as the goals, they don't cut you a lot of slack since the levels are pretty easy. There were a few shortcuts I used.

1-3: After hitting the midpoint, you can skip the top right area by dangling the little guy through the gap just left of the goal.

1-5: You can skip almost the entirety of this level. On the 1st moving platform, get the little guy bouncing on the big guy at the very left edge, then quickly hop up to the midpoint platform and swap sizes.
