There are 6 challenges in the game, each with a unique scenario and 4 teams to choose from.

Survival: Avoid relegation, one season only.

Promotion: Win promotion with your team inside two seasons.

National Champions: Win the league with a good, but not outstanding team, inside 3 seasons.

Champions of Europe: Win the European Champions Cup inside 4 seasons with a mid-table team.

Benefactor: Guide a small club to the top league in six seasons.

Giant Killers: Win your country's top cup in one season with an unfancied team.

You need to win at least one scenario from each set of challenges. You are not required to win all the challenges with all the teams. There is a seperate achievement for winning a challenge with all 4 teams.

I avoided using English and Scottish teams, because of their work-permit laws that restrict players from outside the EU being bought. So, here are the teams I would suggest doing each challenge with:

Survival: FC KooTeePee (Finland)
Promotion: AC Amiens (France)
National Champions: SK Lierse (Belgium)
Champions of Europe: Sparta Rotterdam (Netherlands)
Benefactor: FC Infesta (Portugal)
Giant Killers: AC Horsens (Denmark)

Patience and luck are key to getting these challenges. To improve your squad, when on the player search screen, search for players with their contract status "Expired", and sort by value. The higher the player is worth, the better he is. When offering them a contract, look for the ones that say "Key Player" or "First Team". While doing that, sell about half of your squad, mainly the most expensive ones, so you can build your balances.

Another good bit of advice, and I know it makes it look really long winded, but it helps if you play the matches, instead of going to "quick result", otherwise your team will either draw or lose, no matter how good they are.
