'Weapon Challenges' simply refers to a specific type of challenge in challenge mode. The last 'Weapon Challenge' is Challenge #19. Complete all challenges up to, and including #19 and the achievement unlocks.
Like all challenges, you can fail and get an 'F' and it will still count as being completed (as well as unlocking the next challenge).
