  Easiest way I found was to play Resistance Mode on the map Las Barricadas. At the very last checkpoint, once you've completed the objective, the dispatcher will advise you to leave the area and get to the tunnels to end the mission. However, a Goliath rolls out onto the street shortly before she does that and this is where you get the achievement.
  
  I'd suggest playing on Easy and you should have the RPG unlocked along with several handmade explosives as the Goliath can take quite a beating before going down. There is an ammo crate at that checkpoint, and I'd suggest not using it until you've hit the Goliath with all of your RPG shots. If it still hasn't gone down, go refill and hit it 3 more times. That should take it down.

  I found that destroying it with an rc car explosive caused the achievement not to unlock

  The SCHWARTZ 00's guide is fantastic and I was going to use this to get the cheevo myself but I found when playing through the Campaign there is a Mission in which you have to defend Ned's Armory. At the end of this mission a Goliath turns up and you have to destroy it as part of the mission. I used 2 rocket launcher shots and 3 pipe bombs to take it out. As soon as I did the cheevo popped. Hope this helps.
  (Should probably mention that i was playing on easy)

  This is same way I got mine,however at first I used a RC car explosive which took it down in 1 hit but the cheevo never popped I did again two more times and still no joy so I threw 1 pipe bomb n 3 RPG n it popped so for some reason won't pop with n RC car explosive. hope this saves someone else the same hassle.

  I destroyed the Goliath 5 times in that mission, but no achievement. The only achievement that i've got is the story related one. I used the Rocket Launcher and the Limpet Mine Launcher only to destroy the Goliath, but as i said, no achievement. What i've done to make the achievement unlock is simple. I've only shot the Goliath with the Rocket Launcher or the Limpet Mine Launcher without destroying it and then finishing it with the Pipe Bomb. Achievement unlocked. Another, little tip, that i can give for that mission is: if you, like me, after destroying the Goliath, you went out of the yellow zone and got the story related achievement but not the King David achievement, there's no need to find another Goliath for the achievement. You can just reload the checkpoint and you will be back at the point where you have to destroy the Goliath.
  
  So, if you have trouble unlocking this achievement, destroy the Goliath with the Pipe Bombs. Hope this help someone.

  Missed it on the main campaign and don't want replay it, I completely understand (yuck). But do you have either Voice of Freedom or Beyond the Walls DLC? Good, cause this achievement can be unlocked on DLC campaigns as well. Goliath always show up at the end of campaign which takes either 30-45 minutes to complete. Set them to easy difficulty and use explosives but don't use the RC bombs, just toss em in the general direction then it will unlock.
