Start a game on rookie difficulty. 3 minute quarters should be enough, and not take too long to play out. When you get the ball, run back into your own end zone and allow a safety. On the CPU drive, lineup to block a field goal on 1st down. This leaves the CPU receivers free lanes all the way to the end zone.
Repeat until they are up 17 points, then call run plays to wear down the clock and then punt out the remainder of the half.
After they are up at least 17, go to the settings and set the CPU fumble skill to 0, and the pass blocking to 0. Go to player skill and set the defensive reaction time and tackling to 100.
This will cause the CPU to fumble the ball away almost every drive. The 0 pass blocking gives a good chance to pop

You can lower the CPU defensive sliders as well if you need some extra help, but calling big pass plays and driving with big chunk plays throughout the 2nd half should be enough on rookie difficulty. The CPU will fumble on one of their downs, so you'll have enough possessions to complete the comeback even with 3 minute quarters and it'll end much quicker.
