This achievement is really not that difficult. The key is to focus on entertaining visitors to earn coins. (BTW, earning 1000 coins to complete the Starport Atlantis challenge will not count for the Capitalist achievement; it seems what happens in challenges does not count towards any of the regular colony achievements.)

Add two more food types to the bio-dome. (I think I used wheat and onions but not certain; just add two items to balance what's already there.)

Salvage the dorm. Build a cabin instead and load it with beds - at least four.

Add a TV to the canteen and make sure there is a water fountain. I added a plant as well.

Add a bar with at least one large table and a drink machine. I also included a tv and a plant.

Add two landing pads near the star port.

Air and water should be fine. I added one medium wind turbine to supplement power later in the game.

I also added a small multi-dome with a bench and an exercise bar but I believe that this was a complete waste as I never saw anyone using it. It seems that weary space travelers are only interested in sleeping, eating and drinking. (I suspect that they would also be interested in something else, but we'll have to see if they come up with a brothel in dlc. I know we're all thinking it.)

After setting things up I just hit x 4 speed and monitored the landing pads and space port, usually immediately dismissing trade ships. You want visitors to come rest and drink and leave coins as quickly as possible.

Regarding trading, I only sold excess starch once in a while and I did buy a little plastic and metal in the beginning to build some of the facilities. However, I'm not sure this would be needed if you don't build a multi-dome. Spares ran out just before I hit 1000 so I never needed to buy any.

I hit 1000 coins around day 13 and there was definitely room for improvement of my facility. Food got a little thin here and there - it might be better to build a bigger biodome but that may tax resources too much. I'm also not sure if there are enough biologists to handle significantly more food production.
