Firstly you will need to find a Tallbird and its nest:

Tallbirds are black, two-legged, flightless birds with tiny wings and are normally found in the Rockyland biomes. They guard their nest, attacking anything nearby

If killed, they drop 2 Meat and will respawn from their Nest after 2.5 days

For this achievement I would suggest watching the Tallbird for a while to learn its pattern as it guards its nest. There will be times when it strays from the nest slightly and when it does...

run to the egg, grab it and RUN

...and I do mean run because the Tallbird will chase you most of the way across the map before it gives up and you must be prepared for this

Once the Tallbird gives up you should have the egg required for the achievement

It goes without saying that cooking it, prevents you being able to hatch it

To hatch the egg, you will now need to protect it from the elements and keep it by the fire

I hatch them by the keeping them in my inventory where 'hatching' is essentially paused indefinitely until I have to camp at night. Overnight, I place the egg near the fire and pick it up again in the morning

If you repeat this process for roughly three days it will eventually hatch...

Achievement Unlocked! Congratulations! toast

Three things to be aware of:

1) Don't leave the egg anywhere at any time that is out of your sight - keep it in your inventory when you are not hatching it overnight

2) If it turns dark blue, it is freezing. Put it near a fire. If it turns red, it is overheating. Put it in your inventory or further away from the fire

3) They are a little pain in the *** when hatched and will need constant food to shut them up. This will eventually become a Teenbird that is much the same but larger. After roughly 18 days your hard work will be rewarded with an adult Tallbird that will attempt to kill you on sight
