One thing I have found is that in order to do the difficulty specific achievements you actually have to play each difficulty individually. So if you do this on hard it wont give you the achievements for easy or normal so I would recommend playing through this difficulty first.
Tips:
1: Boost, boost, boost. Use your boost as much as possible (You can get more by driving through the slime on the tracks)
2: Drifting - Do your absolute best to use the drifting to your advantage an doing it on as many corners as possible
3: Playing as Arnold is one of the best characters for simple and easy wins through his custom ability. His ability will essentially drive for you for about 10 seconds perfectly when activated which can give you a much needed boost without putting in any actual skill/effort
Multiple controllers: Multiplayer is local only
If you have more than one controller you can grind for this achievement in the multiplayer mode and it will still count for your achievements, just remember which tracks you have already done.
-for this simply turn on as many controllers as possible (up to a max of 4) and place them into the game
This will split your screen multiple ways but will reduce the amount of AI opponents you will have to face and the amount of abilities you will have to dodge.
