Free Roam events are random pvp events that only trigger while you are in free roam mode. You have no control over them and they spawn randomly. From the ones I've played I had one spawn at 15 mins to the hour and another one at the top of the hour so it could be every 45 mins or just those 2 intervals. I will update if I see any trends.

When available, you will see a purple notification on the top left corner of your screen. Hold the menu button then A to accept the invite. The game mode will be anything pvp from Master Archery to King of the Castle you have to compete in. If you miss the invite just press left on the d-pad and go to invites to accept. You have a limited time before the invite expires You just have to complete the event to get credit but you will also receive XP and Money based on your performance.

STEVEN LEE 20I have done about 7 of these and the tracker is still at 0% I completed the event and got the bonus for completing any idea why it’s still at 0?

LuckyKantThe horse rider one doesn’t count but I doubt you have played just 7 of those and nothing else. That’s all I can think could be an issue.

SeitzzAlso, if you're starting now and decide to change the default from offensive to defensive in the play style menu, these invites will not show up. Just a heads up.

GoatlipsFree Roam Event invites do appear if your online setting is Defensive - the game puts up a message saying you've been automatically switched to Offensive for the event (not sure this happens for fishing or photography events).
NB: These are not like the GTA random events that appear on the map - you get a purple invite message.

WholyFrijoleThis achievement is bugged for me, I am stuck at 80%. The first 2 events counted, the third did not, the 4th and 5th counted as my third and 4th, and I have done about 8 of them since the last one that counted, all free roam events, it says it in the invite that it is a free roam event, and it will not budge from 80%. I am going to keep doing different events and hope eventually it registers, I can see there are still recent winners, but after Feb 02 the amount of recent winners feels suspiciously low. I will update it if I manage to get it, this achievement is very frustrating.

WholyFrijoleI managed to get it once I did a couple more events. It did not pop after the events, however after I did a fresh boot of RDR2 without quick resume, it popped as soon as I got online. Here is the event schedule to let you know when the next event is:
