A handy tip for anyone going for this, it appears that using coach mode at any stage during a match results in the game not being counted towards the achievements.
This isn't much of an issue to start with, you can enjoy playing the game, however when going for Ultimate Player it becomes a grind, PES 2008 drove me mad!
There is a way around this, when starting a match pause and go to player settings, then cursor settings (press X) and turn Slct. player on. This allows you to control a single player on the pitch with the computer controlling the rest. You can then simply leave your player standing still, ideally in your own half to prevent numerous offsides, and let the the match play out.
As you are actually participating in the match, albeit doing nothing, it counts on the track record and as a bonus any goals scored by your AI team mates are added to your total!
*UPDATE - If you substitute your chosen player then the AI controls all 11 players and still counts games played and goals on your track record. This is beneficial if you are trying to actually win, rather than just play, matches.
If using this method during a Master League, League, or Cup, when the game has ended edit your team's default lineup to ensure your player isn't in the first team. This way you don't have to keep subbing him every game and you still get credit for goals and games.
