Since this can be done on any difficulty you can just play any instrument you're comfortable with. An infant could basically finish any career on Beginner, but Easy is also not difficult at all for any instrument. If you want to be extra lazy, then play vocals, set the difficulty to Beginner and just put your microphone next to the speaker. This method will finish every song without a problem most of the time. If you've got surround sound, then make sure you pay attention to the distance between the mic and the speaker to avoid feedback.

I have found playing Guitar on Beginner can be pretty boring because all you do is strum without holding any buttons so if you're going to do it that way, then I recommend going at least on Easy because you only have 3 buttons to worry about.

Also, keep in mind that you only have to do the free gigs. You do not have to purchase any gigs to complete the career. Once gigs in a new venue unlock, go ahead and move to that venue and complete as many song as it takes until the next one comes up. Time Square is the last venue. Once you've completed it the achievement should pop.
