  As mentioned by Erutaerc, the Brickchester Airport Strip is a good way to farm Bonus Cubes. What I did was:
  
  I collected most/all of the cubes, flew over the Airport Leap Danger Sign, turned the other way around, flying over the Airport Leap Danger Sign again, landing on the Airport Strip, collecting most/all of the cubes again. After that, I kept repeating the same cycle.

  Thanks, it wasn't tracking for me either. I'm only 100 from the goal.

  If you don't do that, the game will still give you indications of your progress for every 50 smashed cubes in a popup at the bottom of the screen. It's worth pinning the brick challenge regardless.

  Step by step video guide on how to quickly farm 500 Bonus Cubes
  
  For basic text based instruction open the spoiler below:
  
  

  *** Spoiler - click to reveal ***This challenge is on the Brick Challenges menu but you don't really need to highlight it unless you want to know how well your progressing.
  
  I'd recommend a fast and wide car if possible, I mainly just used an X class Lego Senna
  
  Now you need to go to the Airport leap danger sign, jump and collect all the bonus cubes on the runway and and the end of the runway.
  
  While it is possible to keep going left and picking up a few extra cubes (around 9ish), it is faster to just keep running up and down the runway and Turing around quickly after each jump, thus farming 20 Bonus cubes faster over time than collecting 29 cubes at a slower rate.

  Bonus cubes respawn after every event, and for the best cluster, travel to the airport and drive down both runways and up on to the helipad area. Doing so will net you 29 bonus cubes each time (5 on the long runway + 15 at the end + 4 on the short runway + 5 on the helipad).

  I've been using this method but instead of doing events I've been fast traveling back to the Lego home and fast travelling back to the airport. They seem to respawn everytime.

  They also respawn after each drag race, so I just collected 20 bonus cubes each time while driving back to the start. With an X999 Mosler, drivatar difficulty on unbeatable and the rest of the settings on easy, for example, you'll win each race, collecting an additional 930 cr and 1180 influence per 20 bonus cubes.
