This is easiest to accomplish in challenge mode
Open up your park panel with
Scroll across to Research and Development and click research, the New Research
Choose any of the items here (they vary in cost and time, scenery seems to be the least costly)
Note: This is likely achieved in Campaign also
You are able to change the monthly cost if you want to unlock the item quicker, though you'll probably be researching whilst playing the game anyway
