(edited 20101126 since the original link i posted no longer works)

Try using but reverse roles (xbox ai is human player on the website).

Try using a web based connect 4 game, but reverse the roles. That is, xbox ai is human player on the website.

    To be VERY clear:
    - start a game of connect 4 on your xbox
    - start a game of connect 4 on a web site
    - wherever the xbox ai moves, perform that same move in the web app (as the web app human)
    - pay attention to where the web app ai moves. Make that same exact move against the xbox ai
    - the colors may not match between the human xbox and the web ai, so adjust accordingly

Some links include: (i used this, but as of 20101125, it appears the site is no longer live)

NOTE: the above links are NOT owned by me, so availability is subject to the respective content providers. I used the first link, but the site seems to have disappeared. I cannot attest to the intelligence of the other two links. The general approach still applies though.

I found a way to totally cheese this achievement. Was pretty easy and took little effort...

Set up the game this way:
    Game Mode = Power Chips
    AI Difficulty = Novice
    Column Drop = No
    Drop Clock = Disabled
    Rounds = 5 or 7
    Score Limit = 20
    Time Limit = 2:00

Take the game nice and easy, and when you know you will have the point lead with your next played chip, hold off on dropping it until there are 1-2 seconds left on the game clock - the AI won't have time to counter. (Just make sure there is no set-up that will drop for him when your chips drop. Not sure if it will trigger, but why take the chance.)

You can play around with the Score Limit and Time Limit if you are confident enough in your playing, but this worked for me on my first attempt, so it shouldn't be an issue.

Set up a Custom game of Connect four and change the settings to allow collumn drops. I found that when you get as many of your pieces on the bottom row and wait usually a collumn will drop that allows for an easy win.
Also if you are about to loose and even if the computer has just connected four on you, if you hit start quick enough (before it says the the computer has scored in the top right corner of your screen) the game doesn't register that you've lost and you can quit the game and restart another. This comes in handy if you have won a few and don't want to loose your streak. Just start up another game and it will remember your previous wins and your streak will continue.
