For those of you who don't have a ton of guitars (and lack friends with guitars), this achievement is easily obtained by playing in the team rockfest game mode. It may take a couple tries to get matched up with 7 other people, but when you do, they are guaranteed to be on the same instrument, and you'll get the achievement as soon as the first song starts.

ElBlaze2010I unlocked this today and can confirm that it pops at the end of the song, not when the song is started.

This achievement popped at the end of the song on both my Xbox and the second Xbox I boosted this with.

Just to add to ASic777's solution, imagine you are in a party of 4 each with 2 guitars. Don't party up with another person (4guitars searching for 4 guitars) as we wasted over an hour trying to match up but it wouldn't work. Then we split off into our own partys (4 group of 2 guitars searching) and found each other first time :)

The other solutions mostly cover getting 8 guitars together, but I've had some problems finding the right way to play as 4-vs-4 after that. After some trying, this worked for us:

If you have all instruments in one Xbox Live party, start a new game on mode 'Competitive' and when you're on the lobby screen (with the rocker avatars), invite the party to the game.
The first four players will be shown front and center, the other four will be shown by GT only at the bottom of the screen.
Now you (or whoever is party leader, shown by the crown picture) hit 'Everyone Play!' and verify that all 8 players/instruments are listed.
Select Team Pro Face-Off or similar on the next screen.
When the song ends, the achievement should unlock.
