This one is really simple and the enemies don't have to be dead just knocked out. When you knock an enemy out you have the option to loot them by holding down the B button.

If you just tap it you should pick up the body. Just take the said body to a hay bale and then press B facing the and Ezio will drop the body in the hay.
Just do it 5 times to the same hay bale and you are set.
