The key to this achievement is a high level grav drive, upgrading your Astrodynamics skill, or both. I would highly recommend both! Patience is a must as well as there are 120 Star Systems. Thanks for counting,

If you want to maximize your chance for this early in your playthrough, I would recommend just using your grav drive to hop between systems.
If you want to do this and earn some XP/Credits on the way...
*** Spoiler - click to reveal ***also search out any Gas Giants you find. They're super easy to scan fully - since their structure prevents you from landing on them and any useful resources developing - which yields a Data Card you can sell to vendors. For whatever reason, these Data Cards have the same value regardless of how difficult they are to obtain.
Without spoiling anything, I would recommend waiting until you've progressed through the main story enough to meet...
*** Spoiler - click to reveal ***After you complete a few Main Missions, you'll join the Exploration Group Constellation. You will meet a member who is working/living on a Star Station called The Eye in the System Alpha Centauri. It is orbiting the planet Jemison, which is the home of New Atlantis. He seems to be the best vendor to sell your Scanning Planets Data Card to, at least from my experience.
...as they will give you a higher price than a standard merchant.
Also, make sure you invest in the Merchant Skill if you want to maximize your Credit yield. When I have this Skill maxed out, I earn over 1400 credits per Data Scan from each full scan. The vendor has a max Credit limit of 20k but jumping to some other Systems seems to reset it quickly. I'm not sure what the minimal time delay is.
I can list out each Star System you're looking to go through but there's really not much to this entire process.
Be cautious that some Star Systems contain more than one Star. So they'll sometimes be stacked upon each other. I spent some time to count things out and have a list of what I think are the 20 Binary Systems in the base game (not including NG+) as well as the only Three-Star System. From my count, that leaves 77 individual Star Systems. I do not plan to list those out but I can with pictures if people request it in the comments. If I've made any errors, let me know and I'll happily update things.

The way you track if you've visited the System before is it will be light up brightly if you have been there before and it be faded if you have not. Another method is to highlight the name. If you haven't visited it, it will only display the Name and Level. If you have visited it, it will show more details below the name. Thanks,

I cannot confirm how NG+ works, but I assume you just need to visit 120, even though the achievement description says all. This is based on feedback in the comments.
