Achievement: Catch One of Every Type of Fish

Here is a list of all the fish in the game, where to fish them up, and what bait is recommended to use. You will need max fishing skill to be able to land the harder ones. The first 5 fishing quests to upgrade your skill are from the old man by the beach in Seafront. The last set of fishing gambit quests are available when you progress to the second half of the game.

Sardines (Fishing Quest 1) - Bait: Lugworm - Location: Seafront, Beach by the lighthouse.
Blowfish (Fishing Quest 2) - Bait: Lugworm - Location: Seafront, By fishing quest-giver.
Rainbow Trout (Fishing Quest 3) - Bait: Lure - Location: Northern Plains, Dock.
Bream (Fishing Quest 4) - Bait: Lure - Location: Seafront, By fishing quest-giver.
Black Bass (Fishing Quest 5) - Bait: Lure - Location: Village, Dock.
Sandfish (Fishing Quest 6) - Bait: Lure - Location: Desert, Dock.
Royal Fish (Fishing Quest 7) - Bait: Earthworm - Location: Eastern Road from Village, Lake.
Blue Marlin (Fishing Quest 8) - Bait: Sardine - Location: Seafront, Dock.
Hyneria (Final Fishing Quest) - Bait: Sardine - Location: Desert, Dock.
Rhizodont - Bait: Sardine - Location: Desert, Sandstorm fishing spot.
Shaman Fish - Bait: Lure - Location: Seafront, Beach by the lighthouse.
Giant Catfish - Bait: Lure - Location: Village, Dock.
Shark - Bait: Sardine - Location: Seafront, Dock.
Carp - Bait: Earthworm - Location: Village, Dock.

I've found the catfish appears more often using either earthworm or carp as bait, lure didn't work at all for me

I found the only way to catch the Rhizodont was with the carp as bait the rest of the time i just landed rusty junk if i used anything else, also does anyone know if there is a specific dock for the Dunkleosteus, as i keep landing sharks and marlins with that bait at that spot.

To add to rastal's guide, each type of fish has a specific tug sequence that will help you identify what you have on the line. Use this to not waste time and bait when you're looking for a specific type of fish. I'll note them by the number and frequency of small tugs, then "Pull" for the big one where you actually have to land the fish. So 2, 1, Pull would be two quick small tugs, followed by a single small tug, followed by the fish actually taking the bait (don't use A to start the battle, just push down on the LS).

Junk (buckets, cans, and clumps in the desert) will always be 1, Pull. If you don't want to waste bait, a second or so after the big Pull you can just reel it in and get "not even a nibble". I think if you try this with any fish, though, it'll take your bait (but someone else can confirm this).

FISH:

Shaman Fish: 1, 1, Pull
Sardine: 2, Pull
Blowfish: 1, 1, Pull
Rainbow Trout: 1, 1, Pull
Bream: 2, 2, Pull
Black Bass: 1, Pull
Sandfish: Pull (it will bite as the very first action on the lure)
Royal Fish: 2, 1, Pull
Blue Marlin: Pull (same as Sandfish)
Hyneria: 1, 1, Pull
Rhizodont: 2, 2, Pull
Giant Catfish: Pull (same as Sandfish)
Shark: 1, Pull
Carp: 2, Pull
Dunkleosteus: 1, 2, Pull
