WIN 8 Version already has discontinued achievements however here are the ones to knock out asap for the others. If I missed any or added one incorrectly let me know, but I think I have them right. Also for infinity 3.0 snag those update dlc's before they get pulled as well.

Marcos Aspira is right, it's far too many to list in the form of a news post, unfortunately. With the Windows 8 and Windows 10 versions becoming inaccessible entirely, that would put the list at 30+ already.

It looks like another poster has made a good start here:

Apologies if you purposely left them out due to it not being as urgent as the achievements that have features closing in September, but according to Disney's statement the Windows 8 and Windows 10 versions will become inaccessible entirely, meaning their entire lists will become unobtainable in March, even for players who already own the game.

From my reading, uploading will be shut off on September 30. So the three above will probably become Discontinued on that date. It sounds like the rest will be obtainable until March 3, but I plan to finish everything by September 30 to be on the safe side.

I don't think the 3.0 Marvel Battlegrounds and Finding Dory DLCs are in any danger, even after March 3. As far as downloading, they are just Title Updates, housed on Microsoft servers. You just need to physically own the playsets to access them. On the other hand, I could be wrong, so the sooner the better there too.

There seems to be some confusion among my friend feed as to the shutdown of all online features... I guess uploading and downloading will be going down soon on all platforms, but the online multiplayer for consoles will not be going down until march 3rd I think?

If you are looking at picking up some of the figures for Infinity 3.0 a lot of places have them on sale at the moment. If you are in the States my 4 local Wal-Marts were selling them all for $4.96, and places like ShopKo (a national department store chain but for me the ones specifically Northern Illinois/Southern Wisconsin) have them for $5.00. If the store has the 1.0 and 2.0 ones leftover there are different sales but are similarly marked down.

Thank you! Shopko actually has the Disney infinity 3.0 Xbox 360 starter pack in the box for $20! Everywhere else was selling just the disc for around $30.

Thanks for the offer. I have all the online achievements already, except the Win 10 one. I just want to finish everything by Sept 30 in case the server changes cause something to unexpectedly go wrong.

I haven't started Win 10 yet because it requires DirectX 11. The Mac Parallels Desktop Virtual Machine only supports DirectX 10. I could install the game, but I get an error message when I try to start. I will need to use a real Win 10 machine.

As I understand it, only uploading is being disabled on September 30. Downloading and online multiplayer will keep working until March 3. The announcement does have some bad wording that makes it sound like downloading might also turn off on September 30, but that's later clarified. Here's the relevant passages.
Until September 30, 2016, Community Content will still be available and players will be able to upload and download any of their favorite Toy Box creations.

    As of September 30, 2016:
The Disney Infinity Community team will no longer be reviewing or approving any new Toy Boxes that are submitted to Disney for all console, mobile and PC versions of the game. However, when playing on any console, Apple TV or Windows 8/10 versions of the game, players can continue to download their favorite Toy Boxes from the Community Content section until March 3, 2017. (emphasis mine)

To get all the 3.0 achievements on One and 360, you'll also need to buy or borrow the Marvel Battlegrounds (one achievement requires 4 controllers) and Finding Dory playsets. They're platform independent, so there's no separate purchase for each console. The same goes for the starter pack pieces also. So for example you could buy an Xbox One 3.0 Starter Pack, then just buy a used 360 disc instead of another starter pack.

Buying more does speed up completion. The games have "Complete X Feats" achievements. There are enough feats that can be done with Starter Pack pieces to finish the games. However, some feats that require certain characters can be done more quickly. Also, each additional character you own gives an XP boost, so leveling up is faster.

3.0 Win 10 can be done completely free. There's no use of physical pieces. As mentioned, you do need DirectX 11. Extra characters can be added via Web Code Cards that come with the figures. That shouldn't be necessary though for quick completion. I've read that by changing Disney Infinity accounts, you can redo easy feats on Win 10 to get to 75 feats quickly.

Sorry for the double post, but I forgot to mention a very important point that I don't want anyone to miss in an Edit:

Xbox One and Xbox 360 require different bases.

The Disney Infinity bases come in 3 flavors: Xbox One, Xbox 360, and PS3/PS4/WiiU. Unfortunately, MS has restrictions on cross platform peripherals. The same base will work with 1.0 (360 only), 2.0, and 3.0, so you only need one base for each console. So if you buy a 1.0 Starter Pack for 360 and a 2.0 Starter Pack for One, for example, you'll have the bases you need.

The amount of money the Disney brand makes and they still pull a stunt like this. Gfc.
