Well that's a bit misleading. The Scholar of the First Sin version requires extra miracles/pyromancies and sorceries found in the DLC areas.

So if I play the 360 version and complete it. Then play the X1 version. Can I unlock achievement just by transferring the save?

The Achievement list is identical, but the requirements are slightly different. The Xbone version requires spells from the DLC areas to unlock.
You ever wonder why we're here?

How much harder is this version? Are any of the 'New' Spells significantly harder to obtain? Anything that wasn't in the original DS2 that I should be aware of?
I do like it when the red stuff comes out.

I'd also like to know this. Can anyone help us out here?

Xone version isn’t much different than Dark Souls 2 on the 360. Some different enemy placements. The biggest difference is you will have to play through the majority of the DLC to collect the spells, hexes, and miracles.
