Only two pieces of advice here:
1) You can play the whole game on easy if you want, as the difficulty doesn't affect achievements. Difficulty is decided when you start the mission or set up a race.
2) There is handling setup in Options called "Arcade Plus" which is a bit misleading. If you want cars to be easier to control set it to Off.
