The game opened up so well, and pulled me into the story, then now I'm spending hour at a time, just for a 1 minute conversation, then have to do another hour worth of
missions, for another minute long conversation.

Story is spread far too apart, with boring filler gameplay in between.

No way, not all of them. Grand Theft Auto has cutscenes at the beginning and end of pretty much every mission in the game.
Story is almost constant, unless you don't want it, and just want to cruise around.
Mafia 3 is constantly leaving me with no story, waiting for more, and having no idea when it's coming.
Originally, I played the first 3 hours of Mafia III and gave it a 4/5, and thinking I might be raising that score, but instead wanting to lower it.
The start of the game opens so strong, and shows a huge promise which it completely fucks up and has left me bored.

Yeah, I listened to the Mafia III review from Angry Joe and he rants on about the game repeating itself over and over to get through things
Saying you eventually have to take down 36 or so bosses through the game...

Not just yet, I'm going to give it another go. I've played about 3-5 hours worth of it today, and I haven't even got a single cutscene... I'm going to play it a little
more, and see if anything interesting happens.
If it was more Grand Theft Auto like with it's missions, where you can go straight with story route, or do side stuff, I would be totally cool with it.
But it's forcing players to have to do all of the side stuff, just to play another piece of story content.
A good example of a open world game that works really well, would be Saints Row: Gat Out of Hell. If you choose to, you can beat the main story in about 2 hours or so
But the map is packed with 100's of things to do, that would take a good 30 or so hours to complete.
They don't force you to have to do 10 event per mission in the game, or any bull like that
You can just jump in, play through the story, and if you want more, try out each event, complete the ones you like a miss the ones you didn't enjoy
Damn boy, I just hit 3 story missions in a row with major cutscenes and completely different missions, then a random event happened while roaming the world
I got surrounded by some mobsters trying to assassinate me :|
