Rhinos, Hippos and Bears are wild animals that prowl specific areas. They will one-hit kill you and they show up in the second "idol collection" stage of each game.

Rhinos are in the Night Pursuit and Bizarre Bazaar maps.

Start a new game on easy and choose Ruby. You'll want easy to get through the first idol collection stage, first obelisk stage and first trap stage of the game. When you're in the second idol collection stage, look for the area of the map with the wild animals. These tend to be large circular "rooms" with no other enemies and two of each wild animal. You'll want to go into the room when the animal is somewhat far from you and either looking at you or turning toward you. Enter the room and move in the opposite direction from the animal and start sprinting (click down LS while moving forward). If you do it right the achievment should pop immediately. Remember, they one hit you so watch out. If it doesn't pop, get to a safe alcove and try again.
