This is a simple one. Just set the difficulty level to "Freshman," pick a power team as the visiting team, and pick a weak team as the home team. Obviously, play as the visiting team. Make sure you win the coin flip, and receive the ball. Just restart the game if you don't start with the football. I did this on my first attempt against North Texas by returning the opening kickoff for a touchdown.
